• Agar Chocolate Pie

  • 1/2 cup cashews
    1/2 cup cane sugar
    1 tablespoon agar
    1/4 teaspoon salt
    1 to 2 tablespoons vanilla
    1 (3.5-ounce) bar dark chocolate, broken into pieces
    1 prepared pie crust
    Pulse the cashews in a blender until finely ground. Add the sugar and 13/4 cup water (1/2 cup at a time) to cashews and continue blending until smooth and creamy.
    Combine the agar with 1/2 cup water in a saucepan. Heat pan to a simmer; cook for about 5 minutes, stirring continuously, until agar dissolves. Strain liquid through a fine sieve to remove undissolved agar particles.
    Return dissolved agar to pan and add cashew mixture, cook 10 to 15 minutes over medium-high heat, making sure mixture doesn't scorch. Add the salt, vanilla and chocolate pieces; stir until chocolate is melted and ingredients have combined. Pour into mixture into the prepared crust and refrigerate until set.
    Makes 6 to 8 servings.
