Makes 12 servings
Ingredients:
2 cups milk
2 tablespoons rapid-rise yeast
4 cups bread flour
1 tablespoon sugar
2 teaspoons salt
1/4 teaspoon baking soda
Directions:
Preheat oven to 400 F.
Heat the milk to 130 F, no more or it may kill the yeast.
Combine heated milk, yeast, the flour, sugar, salt and baking soda in a mixing bowl; mix well. Continue mixing while slowly adding 1 cup warm water until mixture is not quite runny. If batter gets too runny, add a bit more flour.
Spoon mixture into greased muffin tins, filling each tin about half full. There should be enough dough for 12 muffins or miniature loaves. Let dough rise until it starts creeping over tin's edges. Do not knead or flatten dough!
Bake for 20 minutes and check for doneness. If necessary, bake for another 5 to 10 minutes.
