  • 2 to 3 fresh pears
    1⁄2 cup salad oil
    1 cup sugar
    2 eggs
    1⁄4 cup sour cream
    1 teaspoon vanilla extract
    2 cups flour
    1⁄2 teaspoon salt
    1 teaspoon baking soda
    1⁄4 teaspoon cinnamon
    1⁄4 teaspoon nutmeg
    1⁄2 cup chopped walnuts
    Preheat oven to 350 F.
    Peel, halve and core the pears; chop to yield 1 cup fruit. Beat the oil and sugar together in a large bowl or electric mixer. Beat in the eggs, one at a time, and then add the sour cream and vanilla.
    Sift together the flour, salt, soda, cinnamon and nutmeg. Add to sugar mixture and continue to beat until well-blended. Add the walnuts and pears, mixing well with large spoon.
    Spoon batter into a well-greased, 5-by-9-inch loaf pan. Bake in preheated oven for 1 hour or until toothpick inserted in center comes out clean. Let loaf cool in pan for 10 to 15 minutes; turn out to finish cooling on rack.
    Slice thin and spread with softened butter or cream cheese.
    Makes 1 loaf, about 12 servings.
