1/2 cup butter
1 cup brown sugar, packed
1 egg
2 cups rolled oats
1 1/2 cup all-purpose flour or whole-wheat pastry flour
2 medium, fresh pears, cored and coarsely chopped (11/2 cups)
1 1/4 teaspoon cinnamon
1 teaspoon vanilla extract
1/2 teaspoon baking soda
1/2 teaspoon salt
Granulated sugar, for dusting cookies

Preheat oven to 350 F.

Cream together the butter and brown sugar until smooth. Beat in remaining ingredients, except the granulated sugar, until combined.

Drop dough by rounded teaspoons onto a lightly greased baking sheet. Sprinkle generously with the granulated sugar. Bake in preheated oven 15 minutes or until lightly browned.

Makes 4 1/2 dozen cookies.
