Nonstick cooking spray, as needed
3/4 cup honey
6 tablespoons orange juice
6 salmon fillets (6 ounces each)
Salt, to taste
Ground black pepper, to taste
2 tablespoons toasted sesame seeds
Adjust oven rack to upper-third position and preheat oven to 500 F. Line a rimmed baking sheet with heavy-duty foil and spray with some of the nonstick cooking spray.
Combine the honey and orange juice in a small saucepan, bring to a boil over medium-high heat, lower heat and simmer until syrupy and thick, about 5 minutes.
Arrange the salmon fillets, skin-sides down, on prepared baking sheet. Sprinkle with the salt and pepper. Bake for 5 minutes, brush with about half of glaze and continue to bake until fish is baked through, another 5 minutes. Brush with remaining glaze, sprinkle with the sesame seeds and serve immediately.
Makes 6 servings.
