• Leonard Trevithick's Awesome Strawberry Ice Cream

  • 1 1/2 cups well-crushed strawberries
    2 tablespoons lemon juice
    1/4 cup sugar
    2/3 cup sweetened condensed milk (the Trevithicks use Eagle brand)
    1 cup half-and-half (or heavy cream)
    1/8 teaspoon salt
    Combine the berries, juice and sugar in a medium-sized bowl; set aside, stirring occasionally, until sugar has dissolved. In another bowl, combine the sweetened condensed milk, half-and-half, salt and 1/2 cup water. Stir berry mixture into cream mixture, then freeze according to manufacturer directions.
    Makes 1.5 quarts.
