1 red onion, peeled and sliced
1 really good-flavored cucumber (preferably an in-season, local variety), peeled and thinly sliced
1 (.7-ounce) packet Italian-style salad-dressing mix
3/4 cup wine vinegar
1/4 cup salad oil

Place the vegetables in a large, resealable plastic bag. Add the dressing-packet contents, vinegar and oil. Seal pouch and squeeze to combine contents. Chill pouch of salad in a snowbank, river or lake until ready to serve.

Makes 2 to 4 servings.

NOTE: To avoid contaminating contents of bag with untreated river or lake water, it must be opened carefully, so no water droplets clinging to outside come in contact with salad.
