1 box whole-wheat chicken-stuffing mix
1 large apple, cored and cut into 1/2-inch pieces
1/2 cup red or golden raisins
4 boneless, skinless chicken-breast halves (each about 5 to 6 ounces)
1 1/2 tablespoons all-purpose flour
1/2 teaspoon kosher salt
1/4 teaspoon ground allspice
1 tablespoon olive oil
1/2 cup apple cider or juice
1 tablespoon apple-cider vinegar
Prepare the stuffing mix according to package directions, but add apple pieces and raisins to boiling water just before adding stuffing mix. Set aside and keep warm. To make the chicken, in a large, sealable plastic bag, combine the flour, salt and allspice. Add chicken; seal and shake bag to coat evenly.
In a large, nonstick skillet, heat the oil over medium heat. Add chicken and cook for 4 to 5 minutes. Turn chicken over and add the apple cider and vinegar to pan; cook for 5 minutes or until chicken is done and cooked through. Remove chicken from pan and drizzle with cider glaze. Serve with stuffing.
