• Crispy Fried Durian

  • Rice-paper wrappers
    Durian flesh
    2 egg yolks
    1 cup flour
    Oil, for frying
    Whipped cream, yogurt or ice cream for serving (optional)
    According to package directions for the rice-paper wrappers, soften 1 wrapper at a time by dipping for a few seconds into warm water. Place 2 spoonfuls of the durian flesh onto moistened wrapper, fold in each end like a burrito and roll tightly. Repeat with remaining wrappers and durian flesh, using all fruit.
    In a bowl, beat the egg yolks and add 1 teaspoon of the flour, mixing well. Spread remaining flour on a plate or in a shallow bowl.
    Dip rice-paper rolls into egg-yolk mixture, then dredge in flour. Deep-fry in the oil until puffed and crispy. Serve with the whipped cream, yogurt or ice cream, if desired.
