  • Cocoa-Chili Marinated Steak

  • 1 tablespoon cocoa powder
    2 tablespoon brown sugar
    2 tablespoons ancho chili powder
    1 teaspoon cinnamon
    2 teaspoon salt
    1/2 teaspoon black pepper
    1/2 teaspoon garlic powder
    1/2 teaspoon onion powder
    1/4 cup olive oil
    1 (1 1/2- to 2-pound) steak (such as flat-iron, flank or skirt steak)
    In a small bowl, combine the cocoa, sugar and spices. Stir to combine well. Stir in the olive oil to make a thick paste.
    Spread mixture on all sides of the steak. Place in a plastic, resealable bag and allow to marinate, refrigerated, for 8 hours or overnight.
    When ready to cook, remove steak from marinade. Grill or broil steak until it reaches desired doneness (about 145 F on an instant-read thermometer for medium).
    Remove steak from heat. Cover with foil and let rest for 10 minutes before slicing. Makes 4 servings.
