  • Peach, Prosciutto and Arugula Sandwiches

  • Goat cheese, as needed (see note)
    2 ciabatta dinner rolls, split and toasted
    Salt, to taste
    1/2 large ripe peach, pitted and thinly sliced
    Arugula leaves, as needed
    Fresh basil leaves, as needed
    Prosciutto slices, as needed
    Spread some of the goat cheese on each cut side of the toasted rolls. (You'll end up with goat cheese on 4 pieces of bread.) Sprinkle a little of the salt on top of goat cheese.
    Layer the peach slices on bottom halves of rolls, on top of goat cheese.
    Layer a mixture of about 3 parts of the arugula and 1 part of the basil leaves on top of peaches. Feel free to pile on greens.
    Top greens with the prosciutto slices. Close up sandwiches and eat immediately. Makes 1 to 2 servings.
    NOTE: Exact measurements aren't important for this sandwich. Feel free to mix tangy, salty, sweet, peppery and meaty flavors to your liking.
