• Spicy Peach Salsa

  • 1 1/2 cups small-diced, ripe peaches
    1/4 medium red onion, peeled and diced small
    1/4 yellow, red or orange bell pepper, stemmed, seeded and diced small
    1 jalapeno or other similar-sized hot chili, stemmed, seeded and minced
    1 tablespoon minced, fresh cilantro or flat-leaf parsley
    2 tablespoons fresh lime juice or rice vinegar
    1/2 teaspoon ground cumin or chili powder (optional)
    Kosher or sea salt, to taste
    Freshly ground black pepper, to taste
    In a medium bowl, combine all the ingredients. Let stand for 10 to 15 minutes to allow flavors to blend.
