Grilled Haddock With Green Olive Salsa

ready in: 20 minutes

Cooking spray, as needed
4 tablespoons olive oil, divided
1 1/2 pounds haddock fillets (or other mild-flavored white fish)
Salt and freshly ground black pepper, to taste
1 small red onion, peeled and diced
12 large, garlic-stuffed green olives, diced
12 cherry tomatoes

If a fish-grilling basket is available, give it a light coating of the cooking spray. Otherwise, place a large sheet of foil on grill grate and coat it lightly with cooking spray. Preheat grill to high.

Drizzle 2 tablespoons of the oil over both sides of the haddock fillets, then season them with salt and pepper.

Place fillets either in grilling basket or on foil, close grill cover and cook for 6 to 8 minutes, or until fish is opaque through center and easily flakes when touched with a fork. There is no need to flip fillets.

While fish cooks, in a small saucepan combine remaining olive oil with the onion, green olives and tomatoes. Saute for 7 to 8 minutes or until tomatoes begin to break down and onions are just tender.

To serve, spoon some salsa over each portion of fish.

Makes 4 servings.
