24 ounces (three 8-ounce cans) tomato sauce
5 garlic cloves, peeled and minced
2 tablespoons olive oil
Salt, to taste (depending on tomato sauce used, salt may not be necessary)
Freshly ground black pepper, to taste
About 2 tablespoons finely minced, fresh basil (optional)

In a small saucepan, combine the tomato sauce with the garlic and olive oil. Bring to a boil, reduce heat and simmer for 3 to 4 minutes, to develop flavor of garlic. Remove from heat.

Adjust seasonings by adding salt if necessary, the pepper and basil (if using). Let cool. Store in refrigerator if not using immediately. Keeps for several weeks. Or freeze for up to several months.

Makes about 3 cups (enough for 2 large pizzas).
