  • Turkey Cobb Sandwich

  • 3 slices good-quality bacon
    About 2 teaspoons soft butter
    1 hamburger bun, split
    1/4 ripe avocado
    2 heaping teaspoons crumbled blue cheese
    2 teaspoons mayonnaise
    2 thin tomato slices
    1 large egg
    4 thin slices cooked turkey
    In a skillet over medium heat, cook the bacon until crisp, then drain on paper towels and set aside. Wipe skillet with a paper towel to remove most bacon grease.
    Butter cut sides of the hamburger bun, then brown in skillet over medium-high heat until golden.
    Meanwhile in a small dish, mash the avocado with the blue cheese.
    Remove bun from skillet and spread browned surfaces with the mayonnaise. Spread bottom half of bun with mashed avocado mixture. Top with the tomato and cooked bacon.
    Cook the egg in skillet over medium heat until white is set; gently flip and cook until yolk has set around edge but is still slightly soft in its center, for about 30 seconds; remove from pan. Add the turkey to pan and heat through.
    To assemble sandwich, place warm turkey and egg on top of bun with tomato and bacon, add top half of bun and serve immediately.
    Makes 1 sandwich.
