The wine-making classes offered through the Southern Oregon Research and Extension Center are set from 7 to 9 tonight and Thursday at the center at 569 Hanley Road, Central Point. It wraps up with an exercise in harvesting, testing and adjusting sugars and acids on Saturday.

The classes are taught by Linda Sue Donovan, a winemaker for Cowhorn Vineyard in Jacksonville.

Students will go through the complete process of wine making, including selecting equipment, harvesting, crushing, fermentation stabilization, racking and tasting and detecting problem wines.
