Rolar Yondorf of Porters in downtown Medford credits his 30-year relationship with Bruce Emerson of Emerson Distributing and Cherry Street Meats for helping him procure the best cow in town. Emerson ages his beef an extra three weeks before delivery, which "accounts for richer flavor and tenderness," said Yondorf.

The rest comes from his expert crew's ability to butcher, season and prepare the meat.

Outback Steakhouse opened in 1998 along Highway 62 near Costco, the third in Oregon at the time. Though the chain restaurants have an Australian theme (ever had a Bloomin' Onion or a Kookaburra Wing?), they're owned by a partnership based in Tampa, Fla.
