Traditional cultures around the world have known for centuries that eating small amounts of fermented food every day is essential for good gut health. The class will also practice creating sauerkraut, kimchi, gingered carrots, pickled vegetables and chutney. All recipes are inspired by the dietary principles of Weston A. Price, Ann Wigmore (of wheatgrass fame) and Sally Fallon, author of "Nourishing Traditions" cookbook.
