Chamber Communiqué: Public House chef wins Ashland Culinary Festival top honor

This past weekend approximately 1,000 people enjoyed the destination culinary event produced by the Ashland Visitor and Convention Bureau. The ninth annual Ashland Culinary Festival welcomed more attendees and delicious food vendors then any other year in its history.

From sold-out culinary workshops to local samplings from food artisans, restaurants, award-winning wineries and breweries, the weekend's centerpoint was the chef competition.

Twelve local chefs competed and we commend them for their talent. Here are the results:

• Round one winner: Skye Elder of the Brickroom got the highest score for round one with chicken being the secret ingredient, preparing a hot and cold preparation.

• Round two winner: Josh Dorcak of Public House got the highest score for round two with the secret ingredient of rib eye and bone marrow with a hot and cold preparation.

• Round three winner: Stefano Cipollone of Belle Fiore Winery got the highest score of round three with secret ingredient whole steelhead and clams in a hot and cold preparation.

These three chefs advanced to the final round, along with Billy Buscher of Alchemy Restaurant who earned the fourth or wild card slot in the final by having the highest score of the nine non-advancing chefs.

In the final round, Josh Dorcak of Public House earned the most points with his execution of the following:

• First course: moose crayfish with lemon juice in a cold preparation;

• Second course: Chilled coconut, crawfish, squid thai soup; and

• Third course: Chanterelle cream with sliced crawfish, cod, mushrooms, apples with sake and squid with lime.

Josh earned the title of Top Chef 2015. Awards presentation followed, concluding this exciting culinary weekend.
