Basic Cooked Quinoa

2 cups chicken or beef broth

1 cup Toasted Quinoa (as described above)

¼ to ½ teaspoon salt

Bring the broth to a boil in a 3- to 4-quart pan; stir in quinoa and salt. Cover and simmer gently on low heat until liquid is absorbed, 15 to 20 minutes. Serve; or cool, cover and chill up to 2 days. Makes about 4 cups.

Curry alternative: Add 1 teaspoon curry powder to the cooking liquid.
