Grammie Hamblet's Deviled Crab

1 cup celery, cut very fine

1 good-sized green pepper, cut exceedingly fine

1 cup of finely sliced green onions

1/2 cup chopped parsley

2 pounds crab meat (rinsed and picked through for cartilage)

21/2 cups coarsely crushed cracker crumbs, plus more for topping

1 teaspoon salt

11/2 teaspoons dry mustard

Healthy dash Tabasco

1/2 cup heavy cream

1 cup melted butter, plus more for topping

Preheat oven to 350 F.

Mix all the ingredients lightly and spoon them into a buttered baking dish. Top with additional crushed cracker crumbs and brush them with more melted butter.

Bake for 25 to 30 minutes or until crumbs are delicately browned. Serve dish at once.

Makes 8 servings as an appetizer or lunch entree.
